• Pumpkin Protein Pancakes with Mangos & Walnuts

    Being fit requires you to both eat right and be active.  Being prepared and cooking meals and snacks ahead of time helps ensure that you have healthy options available when you need them.  These pancakes are perfect for the fall season.  They are a family-friendly dish (tested on my children) that can be served for breaksfast, lunch or dinner.  You can serve them with mangos and walnuts on top; and if desired, you can add a bit of honey or agave syrup to sweeten them.  They also make great, packable snacks.  Store them in the frig and then grab one when you are headed out the door.  They also last for quite awhile even outside of a cooler (assuming it is not too hot).  When I hit the gym, I take these with me because after a workout I am always hungry.

    Ingredients:

    1/2 cup whole wheat pastry flour

    1 scoop vanilla protein powder

    2 teaspoon baking powder

    1 teaspoon cinnamon

    1/2 teaspoon nutmeg

    6 tablespoons pumpkin

    4 tablespoons cottage cheese (if you’re not a cottage cheese fan, I bet yogurt would work too)

    1 teaspoon vanilla extract

    1/2 cup milk

    2 egg whites

    2 mangos

    ½ cup of diced walnuts

     

    Directions:

    Preheat a pancake griddle or pan to medium heat and grease. Combine all dry ingredients in a bowl. Combine wet ingredients in another bowl and whisk to combine. Add wet to dry ingredients and mix. Pour batter onto pan, cook approximately 1 1/2 minutes per side, or until fully cooked, flipping once.  Top with fresh mango slices and walnuts.  Makes 10 small pancakes.
